The format of food halls was formed in Russia in the modern sense in 2014 with the opening of the first project in Moscow.
In 10 years, the number of such gastronomic facilities has exceeded 100, and, according to NF Group, at the beginning of August 2024, there are already as many food halls in Russia as in the whole of Europe.
The main trends in the creation of gastronomic spaces in Russia – a variety of cuisines and dishes, high quality food, support for local and unique gastronomic concepts, as well as the development of food halls as places for recreation and live communication – correspond to European practice.
At the same time, experts note that the number of planned and under construction food halls in Russia significantly exceeds European indicators, which is associated with the initial stage of development of this market, especially in the regions. In the medium term, the Russian market may overtake Europe in terms of the number of such facilities.
